Baked Banana Goodness!

I can see the commercial now, "Ew, Mommy! What happened to the bananas!" The calm mother smiles, pats child on the head, saying "Little Tommy, this is the perfect opportunity for us to bake one of mommy's favorite treats!" Cue announcer guy, who will probably go into a 22-second pitch for Pam cooking spray or Dole bananas. Yes, friends, it's that time in the R household! Whenever those bananas get overly freckled, C busts out the butter and the walnuts and gets bready with it! This time I decided to mix it up a little and find a recipe with some spice and interest, so I headed directly to my all-time favorite recipe resource, www.allrecipes.com. As usual, Allrecipes was up to the challenge! I typed in my required ingredients (bananas, flour, sugar) and told them to look for recipes in 'breads'. Voila! Banana Bran Muffins was the #1 find. I added it to my online recipe book, including notes on the little "Channeling Rachel Ray"adjustments I made (I used fat free vanilla yogurt in lieu of milk and added about 1/4 tsp. of each cinnamon, cloves, and nutmeg. Also used wheat germ) after reading several reviews of others to get some ideas on how to make up for the fact that I don't have any milk. A little measuring, sifting, and stirring later and they have 6 minutes left in the oven. I am taking them to school tomorrow to share with my team, so I will let you know how they are received! Like you care!

Our weekend was relaxing and relatively free of labor. Lots of football. If it wasn't NFL highlights, it was college, if it wasn't college, it was high school. If it wasn't high school, it was a documentary about football or a game on ESPN classic. ARGH! Thank God for my magazines and books! I rested my voice and my body and made some chicken spaghetti and 6-weeks muffins for some friends, then took said food over to their place on Sunday after church. I got to hold little Lauren, who was celebrating her first full month of life post-utero and took the world's cutest nap on her Aunt C's chest. Also had a great chat with mommy Tania, who is taking to motherhood like a duck to water! Yay, Mommies!

Monday was another low-key and lazy day. We went out to Sugar Land at 3:00 to see the G side of the family. Did some shopping at Sam's Club (where else can you find a 10 pound container of pitted dates?) Helped my mom upload her Africa pictures off her camera and had dinner at Pappasito's with Pappa G.

Friday marks our 5 Monthaversary! Yes, there is such thing, I made it up! Feel free to use it, but don't forget to cite your source! Anyway, we are going to be staying at the San Luis in Galveston to attend a Texas Fence Association function. Anyway, the San Luis has a special place in our hearts because it's where we stayed on the night before we left on our honeymoon cruise. Awwwww!
